Vintage Port Food Pairing

Question by: Patrick, via Mobile

Q:

We have a well cellared 77 vintage port.  We would like to enjoy it with friends over a main course rather than after dinner.  Any suggestions?

A:

Hi Patrick, You do not mention the brand of your Port -  Dow's 1977 and Graham's 1977 are still showing youthful fruit flavours and would be well paired with game - venison, wild boar or duck breast are often served with Vintage Ports, and there are some Port afficianados who will recommend a good rare steak with your Port.  If your Port is one you believe will have matured into a  secondary range of flavours such as honey, caramel, tea, cigar box, then a milder game bird such as pheasant or partridge might be an interesting choice.

For more inspiration, the Graham's Blog has had several articles about some creative food pairings:  Chef Margo Reuten of DaVinci Restaurant in Holland hosted a Port Masterclass and Meal featuring Graham's Ports, and you might also be interested in chef Gerrit Greveling's menu for Graham's Tawnies Retro event - he suggests mackerel and wild duck with Port, in addition to the foods on the event menu featured in the article.
