Dow's Nirvana

Question by: Fredrik, Göteborg, SE

Q:

I conduct chocolate and wine tastings and was very intrigued to learn that there was a port specifically made to go well with fine chocolate. Since Dow's Nirvana isn't available in Sweden I was wondering if you know of any way that I could get my hands on a bottle or a case to try it out?

A:

Hi Fredrik, What a wonderful job that must be, regularly conducting tastings of chocolate and wine!  You are right, Dow's Nirvana is not listed with our Dow's distributor in Sweden, however you could find it at the duty free shop for the Tallink Silja ferry boats which criss cross the Baltic Sea between Stockholm, Tallin, Riga, Helsinki and other destinations.  It will also be launched late in 2012 in Denmark.

The Nirvana Ruby Reserve Port was blended very specifically to pair with chocolate - if you follow the link to the website you can read about the intensive tasting and chemical analysis that went into the development of this wine.  The final blend was crafted to accentuate the floral aromas and the tannic structure of the wine, in order to best complement the quality of dark chocolate, particularly 64% cacao chocolate.

Ruby styles of Port are often promoted as the only wine that pairs really successfully with chocolate, and we find they are generally best with the darker chocolates.  You might also try chocolate desserts with Graham's Six Grapes, or indeed any Reserve Ruby, Crusted, Late Bottled Vintage or younger Vintage Port which is still showing primary fruit flavours.
